This has been another interesting week, and one which has tested me again, to stay on track while just living a normal everyday life. I am trying to make my new way of eating a lifestyle change, so I want to be able to occasionally have a treat, like the yummy pizza I made for the Fantastic Bake Along over the weekend, without feeling guilty, or falling back into old habits. So far I have been successful! This week, despite a road trip, and indulging in real pizza over the weekend, I lost 2.7 pounds for a total now of 34.4 pounds!
Now for the fun bit! Today I want to share a recipe for tuna salad that I made last week. I’ve been experimenting with tuna salad dishes that don’t have mayonnaise in them, I would prefer a “healthy” oil instead.
For my tuna salad I used:
- 1 can Clover white tuna in water, drained
- 1/2 cup English cucumber, diced
- 1/2 roma tomato, diced
- 1/4 green pepper, diced
- 1 medium shallot, finely diced
- juice from 1/4 lemon
- 1 tbsp avocado oil
- salt and pepper to taste
I drained the tuna and put it into a dish, then I diced all the veggies and added them.
Add the lemon juice, avocado oil, salt, and pepper, and mix together.
I split this into 2 servings so that I could have the second half for lunch the next day, and served it with a few multigrain crackers and fruit. I was quite happy with this mixture, a few other recipes I tried were quite wet, and soggy, but this seemed to be just moist enough for my taste.
Do you have a good tuna salad recipe to share? I am always looking for new recipes to try (not just for tuna) so that I don’t get bored with the same old thing. I’m especially looking for recipes that don’t require much (or any) cooking, for the summer, so if you have any, please share.

Getting started (at least for me) is the hardest part. Once you start to see results it motivates you to continue. Good luck if you decide to go for it!

My favourite tuna recipe is 1 can of tuna, 1 can of corn, two tomatoes diced and half a pack of feta cheese (not sure how much but around 100g maybe?). Then I dress with a tablespoon of olive oil and balsamic vinegar. My favourite for summer!
