Dehydrated Zucchini Chips

I’m late again. I’ve been considering moving this post to Tuesdays because I don’t weigh in until Monday, and I don’t always have time to write, and/or update the post on Monday morning. I’ll see how it goes for the next couple of weeks before I decide for sure.

The past week was not great for activity, since the week after buying my Fitbit and trying to get out to walk more, it has rained here nearly every day, usually just at he times when I’m free to take a walk. All that rain has had an adverse effect on my activity levels, although I’m still getting more steps in each day than I did before the Fitbit.

Happily, the lack of activity didn’t seem to slow my weight loss, because I managed to drop 3.7 ponds this week for a total of 45 pounds! That was a bit of a shock considering that I had both quiche, and cheesecake several days last week. It just goes to show that you can still enjoy your favourite foods, and still be successful, the key is to enjoy them in moderation.

Regarding the cheesecake, I’m happy to share that my no bake tart freezing experiment appears to be working out well! The tarts have been on the freezer (minus the pie filling topping) for the past week, and when I thawed one on Sunday for a treat I would not have guessed that it had been frozen if I hadn’t already known. This is very good news, since it means that if I make them again, I won’t need to worry about gobbling them up before they spoil! And if they are in the freezer, I can’t just grab one on the spur of the moment if I have a craving.

This week, I was having a craving for something crunchy, so I dragged out my dehydrator and using a recipe I saw on Facebook as a guide, I made zucchini chips.

I used one zucchini, and sliced it on the thinnest setting on my mandolin. I tossed the slices with 1/2 tablespoon of olive oil and 1/2 tablespoon of vinegar, which had been whisked together. I placed the coated slices on the dehydrator trays, sprinkled them with coarse salt, and “cooked” them for about 5 1/2 hours until they were crispy. I rotated the trays once (put the top tray on the bottom, and the bottom on the top, and reordered the others in between) about halfway through

The result was a tasty snack, but of course, it doesn’t make a lot once the zucchini is dehydrated. A whole zucchini resulted in a small sandwich bag, only partially full of chips.

Several people I know have commented that you can do the same thing in the oven on low heat, but I personally have never had any luck with that method. My chips, of whatever kind, always come out either burnt, or limp.

If you’ve tried a similar recipe I would love to know if you tried different vegetables, or seasonings, and how they tasted. I’m looking for some new flavours to try out! Please let me know in the comments!

  1. Hmmm…I have a huge zucchini that a friend gave me from her garden. I’m thinking I might try making the chips in the oven. Maybe I’ll have more success. I don’t have a dehydrator so the oven it is. Thanks for the idea. 🙂

  2. Girl#2 just made kale chips in the oven, and they were pretty good. I’ll ask her how she did it…tons of vitamins their I guess. Good for you! 45 pounds is a lot of work, but you must be proud, and motivated! Impressive!!

    1. I’ve had a couple of people tell me I should try kale chips, I’ll have to buy some kale and see how they are usually seasoned. I am trying to stay motivated, I still have a long way to go.
