Roasted Honey Sesame Brussels Sprouts

Wow! I can hardly believe it’s been 30 weeks since I decided to take the plunge and join Weight Watchers to try to lose some weight and get back to being healthy again! (Well, healthier, anyway!) I wasn’t sure where I would be at this point in my journey, or even if I would be able to stick with it this long, but I’m happy to say, I’m almost halfway to my goal, and still going strong! This week I lost 2.3 pounds for a total of 64.6 pounds! I am so close to the halfway point of 68 pounds!

As usual I was on the hunt this week for a new recipe to try, and I found one for Roasted Honey Sesame Brussels Sprouts on Ask Anna shared by Andrea from Cooking with a Wallflower. For a change I didn’t make any substitutions in this recipe, but I did halve it, since I was cooking for one.

Roasted Honey Sesame Brussels Sprouts

I love Brussels sprouts, and I haven’t had them in quite a while, so I was super excited to try this recipe out. So excited that, even though the only Brussels sprouts I could find were tiny and pathetic looking, I still bought them and brought them home!

I served them with whole grain brown rice cooked in broth, and chicken breast coated in 1 tbsp of three cheese dressing, and 15 g of Panko seasoned bread crumbs, baked in the oven. It was a delicious dinner, and I am looking forward to roasting some other vegetables in the Honey Sesame sauce, I think it would be good on quite a few things!

  1. Congratulations! That is a HUGE feat! Your meal looks amazing. I ♥ brussels sprouts. My sister bakes them in the oven with olive oil and salt and pepper. We eat them like candy! When I was a kid, I would drop them in the bottom of my glass of milk and say that I ate them! Who’d a thunk I’d like them now?!

I am so impressed with your perseverance and steady progress, HOWEVER, I am amazed at the recipes that you continually find that are healthy, interesting, and keep you moving so marvelously toward your goal. I think that is the key to weight loss…finding a groove that works for you, but then mixing it up with things that make eating an experience. You have a system going that seems to be so sustainable for life! I am so excited for you!

    1. It’s so hard to be motivated to cook for one, so trying new things keeps me going. I really appreciate the support from people like you, and my family and friends. This journey would be so much harder without it!

  3. Congratulations Kate!! You are doing fantastic! I love brussel sprouts! I just toss them with a little bit of olive oil, salt, pepper and garlic powder then roast them in the oven! Yumm! 😀
