I’m so happy to be able to report that I had another fantastic week, and that I’ve passed a huge milestone in my weight loss journey! For the last few weeks, I’ve been moving closer and closer to passing the halfway mark on my journey, and this week I finally did it! I lost 3.4 pounds, for a total of 68.7, and I can now happily say I have lost more weight than I have left to lose to reach my ultimate goal.
For those of you wondering, I started this journey at the end of February, with a weight of 286 pounds, and I am now down to 217.3. It has been a few years since my weight has been this low, and I’m feeling pretty good about it. My ultimate goal is 150 pounds, so I still have a long trek ahead of me, but it feels great to know that I’m over halfway there. When I started this journey, it seemed like it might be unreachable, but I know I can do this!
I didn’t try any fantastic new recipes last week, but I was bored one night, and looking for a way to make my chicken breast more appealing, so I threw together this bacon wrapped chicken with goat brie.
I took a single chicken breast, and cut a pocket into it. I stuffed 20 g of goat brie, and some minced garlic into the chicken, and then wrapped it in 2 slices of Butterball Turkey Bacon. (I only mention the brand because, although it’s the only type I’ve tried, I have been told by a friend that it’s the only one that actually tastes good, and I do love it.)
After wrapping the chicken breast I baked it in my toaster oven until it was cooked through. It was so good, I’ll be trying it again, and maybe adding some spices or trying some other combinations for stuffing. I served it with a lovely garden salad with mixed greens, red onion, green pepper, grape tomatoes, cucumber, and three cheese dressing.
