Tracey at It’s a T-Sweets Day! is hosting another bake along this month, and rather than a single recipe that everyone is making, this month the bake along has a theme. Apples! Our instructions this month were to choose a favourite recipe featuring apples, and make it for the bake along.
I was quite excited, because I love baking with apples, and I couldn’t wait to browse through my recipe books to find a favourite recipe that I haven’t made in a while. I’ve been thinking about tea and the things that I love to eat with tea lately…probably because I’m looking forward to my tea Advent calendar starting in December, so I chose a recipe for Apple Scones that I haven’t made in quite a few years.
The recipe below includes my own adjustments, but where I substituted something, I will tell you what the original recipe called for. For the apple itself, I generally use MacIntosh (my favourite apple) but I occasionally substitute Granny Smith, just for their tartness, to see how it affects the taste, and that’s what I did for the recipe below.
The original recipe can be found in the Company’s Coming Muffins & More cookbook by Jean Paré.
Apple Scones
1 cup all purpose flour (recipe originally called for 2 cups white flour)
1 cup whole wheat flour (omit whole wheat flour from original recipe
1/4 cup granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup butter, cold
1 large apple, peeled and grated
1/2 cup almond milk (original recipe calls for milk)

cinnamon
Add the flours, sugar, baking powder, baking soda, and salt to a bowl. Cut in the butter until the mixture is crumbly.
Add the apple and almond milk. Stir to make a soft dough, then turn it out onto a lightly floured surface and knead gently 8-10 times.
Pat into 2 6 inch circles and place on parchment paper lined baking sheet. Brush with extra almond milk and sprinkle with small amount of sugar and cinnamon. Score each circle into 6 pie shaped wedges. (I’m not the best at shaping the dough so that the edges are smooth, I know the presentation leaves a little to be desired, lol.)
Bake at 425 °F for 15 minutes until browned and serve warm with butter. If you’re like me, you’ll also have them with tea. Because we were going with an apple theme, I chose Grandma’s Apple Pie flavoured green tea, it was the perfect combination!
I have to tell you, I was so excited to be making this recipe again that I completely forgot to add the sugar, but no harm was done it just meant that the bottom half of my scone tasted like plain tea biscuit with a bit of apple. And the top, with the sprinkled sugar had just the right hint of sweetness, so I didn’t miss the sugar too much. The sugar does however help to bring out the flavour of the apple, so I don’t recommend making the same mistake!
