Wow! It’s been almost two months since I last posted my weight loss progress. Honestly, you all haven’t missed much. As I expected, since passing the 100 pounds lost mark, my weight loss has slowed considerably, and it seems to fluctuate more now with stress, and hormones, but I’m still gradually heading towards my ultimate goal.
The last time I posted, I was at 179.9 pounds. I won’t bore you with the details of the past couple of months, except to say that I’m still on track. I do find that I have a few more fluctuations from week to week now than I did, but I’m still moving (albeit slowly) in the right direction, so I’m very happy with my progress. I’m now at 172.5 pounds, and I’ve lost a grand total of 113.5 pounds!
This past week has been a bit of a struggle, because after the heatwave we had a couple of weeks ago, my refrigerator decided it was time to give up. It’s working for the time being, but I’m waiting for my landlord to order a replacement. They say it should be here sometime this week, so I’m keeping my fingers crossed that it doesn’t completely die before then. In the meantime, I’m trying to keep groceries to a minimum so that if it does quit again, I don’t lose a lot of perishable food.
I haven’t been experimenting much with recipes lately due to the heat, however yesterday I did make some delicious grilled chicken breast. The recipe for the marinade I made up is below.
Maple Marinade
1 tbsp avocado (or other) oil
1 1/2 tsp rice vinegar
1 tsp maple syrup
1 tsp Clubhouse La Grille – Maple Bacon seasoning
Mix all together and pour over 2 chicken breasts (I used boneless, skinless breasts). Refrigerate the chicken breasts over the course of the day, turning every couple of hours.
I grilled my chicken breasts for about 15 minutes on my George Foreman grill because I live in an apartment, and can’t have a barbecue on my balcony. Otherwise, I think these would have been delicious on the barbecue!
I served my chicken breast with some baked asparagus for a nice light dinner.
Well done Kate! It sounds as though you are adjusting well to the slower pace, which can be a little disheartening when you are used to those numbers rolling in faster. Overall, they are still dropping, so you are going to reach your goal. 🎉 The chicken and asparagus look delicious. I am enjoying salad for lunch these days because I have actual romaine heads in my garden! What a treat it has been!

Yum! Fresh veggies from the garden are awesome! I’m envious because I live in an apartment, so no garden for me. Maybe one of these days I’ll attempt a container gardening my balcony.

Girl #1 is doing that, though her roommate didn’t water a thing while she was gone and she lost her pepper plants and her green beans. She still has tomatoes and some lettuce and herbs out on her deck. I think the roommate finally understands, and next time Girl #1 will send a nag text on watering days.🙄

A garden is stress relief for her, no matter the size. She used to just wander around in it when she was home.

Congrats girl!! I am doing something similar to this except I’m going by the guidance of a group called the ladyboss lifestyle that I talk about in my blog. Healthy eating, exercise, recipe videos, workout videos, and more. Healthy eating is definitely the best way to go especially without all of those pills and harmful stuff. congrats again! I bet you feel stunning!!

I agree – a healthy low carb diet is the way to go. I have tried many different kinds of diets, exercises, and pills with some success. However, it was not until I learned how to eat right that I was able to lose weight and keep it off.

Hi Kate! Congratulations on reaching such a great milestone! Losing over 113lbs cannot be easy. Keep going – you can reach your goal! Are you on a low carb diet? I have had great success with low carb dieting.

Hi Lyn, although I have reduced my carbs, I am not on a strict low carb diet, I am doing Weight Watchers. I do eat fewer carbs, and try to choose more complex carbs, but I believe in moderation, rather than extreme diets. I’m looking for something that is sustainable over the long term for me (which is why I don’t say I’m dieting, I’m making a lifestyle change and trying to learn to make better choices) , and I believe I have found it. I’m glad you’ve found something that works for you…I know lots of people who have success with low carb diets.
