Honey Sesame Brussels Sprouts

Wow! I can hardly believe it’s been 40 weeks since I started my journey. Part of my motivation at the very beginning was to lose some weight before my cruise coming up in February. I honestly was not sure how successful I would be, but I figured every little bit helped, so even though I still have over 50 pounds to go, I’m thrilled with where I am now!

This weekend I didn’t feel much like cooking, so I threw together something quick. The chicken part turned out edible, but next time I think I would brown it a bit first. But the Brussels sprouts were awesome! Having said that, please ignore the chicken in the photos of the following recipe!

Honey Sesame Brussels Sprouts
Brussels sprouts
1 tbsp sesame oil
2 tsp honey
1/4 cup broth (any kind really)
salt, to taste
pepper, to taste

Spray a small roasting pan with cooking spray. Add the Brussels sprouts. Mix the sesame oil and honey together, and drizzle over the Brussels sprouts. Shake or stir until the Brussels sprouts are all coated in the mixture. Add a small amount of broth to the roasting pan, just so that the sprouts don’t burn and stick to the bottom. Add salt and pepper, cover the roasting pan and cook at 350 °F for 30 minutes or until the Brussels sprouts are cooked.

I think you can agree, the chicken in the after picture does not look particularly appealing, but it tasted fine if not overly flavourful.

On the weight loss side, I lost .6 pounds this week. This 80th pound is being stubborn, I’m at 79.9 pounds total…so close! I am determined to cross that threshold next week!

  1. Congrats on closing in on 80 pounds! Your Brussels sprouts look delicious, and I’m not even a Brussels sprouts fan. I bet it does taste good with honey & sesame oil. Maybe I’ll try it this way and see if I can like the veggie!

  2. I hate it when you reach a plateau and can’t get past it for weight loss. It’s as if that last pound or fraction there of taunts you. Congratulations anyway on loosing, even if it was less than a pound. I agree on the chicken. Browning would have probably made it more appealing. 🙂

    1. I did! Yesterday morning I was down an additional 1.5 lbs, and was still there today, so I’m hopeful that it will stick until next week if I don’t go crazy the rest of the week, lol.
