Last week I had very little loss, which was not unexpected since I had eaten out several times, and even though I had made healthy choices, I was not completely in control of the ingredients, so I’m sure I probably miscalculated some of the dishes. This week I’ve lost 2 more pounds, for a total of 27.9, and I’m finally starting to see a difference. I still have 108.1 pounds to goal, but I’m setting small goals for myself so that I don’t get discouraged.
Now for the fun part, I made shrimp for the first time last weekend. I love shrimp, but I had never cooked it myself, so I was pleased to know how easy it was! It also gave me the opportunity to try another dish in my new Actifry air fryer, and it’s definitely a dish I’ll make again. I had initially found a recipe that I was going to try, but I didn’t have some of the ingredients, so I altered it to my taste and for the ingredients I had on hand. The original recipe wasn’t an air-fryer recipe, so I was experimenting there as well.
1 lb shrimp, peeled and de-veined
4 garlic cloves, chopped coarsely (you can adjust this, I love lots of garlic so I always add lots)
1/8 tsp cayenne
salt and pepper to taste
1 tbsp sesame oil
Add the shrimp, cayenne, salt and pepper to a bowl and mix until the shrimp is coated. Add the shrimp and garlic to the air fryer. Drizzle the sesame oil over. Turn on the fryer to the meat setting for 20 minutes. Server over rice.
I didn’t have quite a pound of shrimp so I used what I had, and I split the dish into two servings for 4 points each. I loved the heat in this dish, and I’ll be making it again, and playing with quantities…and maybe adding some other ingredients.

I will be making this recipe Kate!! I remember way back when I was afraid of cooking shrimp – now I cook shrimp all the time!! I love getting the colossal shrimp raw, peeled and deviened with tail on – I fill a pot with water, dill, lemon, onion, and celery. Bring it to a boil and throw the shrimp in for about 8 minutes and YUM – best shrimp cocktail ever!! 😀
