Week 29, and I’m still going strong. Sometimes this surprises me, because there were a few times in the last few years that I thought I was ready to commit to losing weight and getting healthy, but it just didn’t work out. Having struggled with this in the past, I know that for me, I have to really be in a specific mental space in order to make that commitment to myself, and apparently, I was finally back in that space this time around.
This week I was running low on cooking inspiration, as well as ingredients, so I pulled out half a pound of lean ground turkey, and made up something on the fly. It actually turned out pretty well, so I’ll share the recipe with you. Although it tasted good, the pictures did not look very appetizing so I decided to skip them for this post.
Now, I’m not a big fan of meatloaf, so I was actually surprised that I liked this, I hope you enjoy it if you give it a try. The next time I make it I would probably use a smaller loaf pan, or double the recipe (at least) so that I don’t end up with such a short loaf, but it was what I had on hand, so here goes.
Turkey Meatloaf
1/2 lb lean (or extra lean) ground turkey
1 large egg
1/4 cup Italian style bread crumbs
1 zucchini, grated
2 tbsp Parmesan cheese, grated
2 or 3 cloves garlic, minced
Salt and pepper to taste
Mrs. Dash Garlic and Herb Seasoning
Mix all the ingredients together, except the Mrs. Dash, and place in a loaf pan sprayed with cooking spray to prevent sticking. Sprinkle Mrs. Dash seasoning on top (however much you like), and cook at 350 F. I cooked this for an hour (because I’m paranoid about undercooking ground meat) but it probably didn’t really need that long.
I served this dish with brown rice cooked in broth with some broccoli thrown in while the rice was cooking. I was pleasantly surprised with this dish, and I will probably try it again, and maybe add a few more vegetables to the mixture, onions and mushrooms for sure. I’ll have to think about what else I can add.
Now for my update! I’m down .4 pounds this week for a total of 62.3 pounds! My loss was extremely high last week so I almost expected not to lose anything, seeing even a small drop makes me very happy!
