I was browsing around on Facebook Sunday and I saw a delicious looking recipe for chicken breast with Parmesan cheese and paprika. Of course, I didn’t think to save the recipe, so when I was trying to think of something a little different for dinner last night, I thought I would attempt to make my own version, and here it is…it’s super simple, I promise.
I was cooking for one again, so adjust the recipe as you see fit.
Chicken with Parmesan and Smoked Paprika
1 egg, beaten
1 tbsp smoked paprika
1 tbsp Parmesan cheese, grated
salt and pepper to taste
1 chicken breast
Mix the smoked paprika, Parmesan cheese, salt and pepper together. Dip the chicken breast in the egg. Dredge the egg coated chicken in the paprika and Parmesan mixture. Place on a baking sheet, and bake at 350 F until cooked through.
I served this with my favourite zucchini noodles with garlic Alfredo sauce, and more parmesan cheese, and it was a super easy, but delicious dinner.
Now for my weekly update! I’m happy to report that I’m down .7 pounds this week, for a total of 65.3!
I might have been able to do a little better, but Friday night I went out to a play with my friend/co-worker, and before the play we went to Ahora, an authentic Mexican restaurant in Ottawa, and had sangria, chicken quesadillas, and tortilla chips with fresh salsa….so yummy! It was worth the splurge, and just a reminder that you can have a real life and still be successful!
Do you have any favourite spices that you like to cook with? I have to admit, I have been on a smoked paprika kick lately. I have tried some really strange substitutions with it, some successful, and some, not so successful, but it’s always an experience.
