Chicken and Mushroom Loaf

My goal last week was to reach or pass my next milestone of 75 pounds, and I’m so happy to report that I passed that milestone! I lost 3 pounds last week for a grand total of 77.2 pounds! My next personal goal is to reach 200 pounds, I’m only 7.8 pounds away from that milestone, and I’m hoping that I can reach it by Christmas. That’s six weeks to lose just under 8 pounds. If I can stay on track I should be able to make that goal.

I have another recipe for you this week. It is very similar to one I made and posted a few weeks ago, but I made some additions, and it was better than ever so I thought I would share the changes.

Chicken and Mushroom Loaf

1 lb extra lean ground chicken
60 g Italian bread crumbs
1 large egg
1 tbsp Worcestershire sauce
1-2 tsp minced Garlic, Chili, and Ginger (from a jar)
1 red onion, chopped
2-4 cloves garlic, minced (in addition to the Garlic, Chili, and Ginger mixture)
1/2 lbs sliced Cremini mushrooms
1/4 cup Parmesan cheese, grated

Put everything into a bowl, and using your hands (yes this is the gross part) mix it all together until it is well combined. I really hate this part of meatloaf, one of these days I’ll remember to get disposable gloves because I it really is disgusting, but the result tasted good, so it was worth it. As I was mixing, I broke some of the mushrooms up into smaller pieces…you can either chop them up smaller, or do what I did.

 

Spray a loaf pan with cooking spray, and place the meat mixture in it. Bake at 350 Fahrenheit for about an hour, or until the mixture is cooked all the way through and reaches a safe temperature.

Serve with Baby Potatoes

I served this with baked baby potatoes for a treat, since I rarely eat potatoes anymore, and it was so good that I didn’t mind having leftovers for several days! I will be making this recipe again sometime.
