Fantastic Bake Along!! — Double Dipped Fried Chicken

The Fantastic Bake Along is hosted by Tami @tanglewoodknots, and Tracy @itsatsweetsday, if you’re interested in joining future bake-alongs here is how it works. I’m not sure how often I’ll be able to participate but I had to try this one after I saw the yummy looking results popping up in my feed. I’m also late posting my bake-along results because although I made it last weekend, I ended up with a migraine and was unable to post. Oh well, better late than never, right?

The recipe everyone was making for this bake along can be found here on Tracy’s blog. I adjusted the recipe a bit, since I’m cooking for one, and because I wanted to use ingredients I had in my kitchen. Here is what I used:

2 boneless skinless chicken breasts, each cut in half so that I had 4 pieces
1/4 cup flour
1 tsp granulated garlic
1 tsp smoked paprika
1/8 tsp pepper
2 tbsp almond milk
1 egg
1/8 tsp sea salt
2 tbsp canola oil

I followed the recipe and mixed the flour, garlic, paprika, and pepper together in a bowl. Then in another bowl I mixed the almond milk, egg, and salt. I coated the chicken in the flour mixture, dipped it in the egg mixture, and coated it again with the flour mixture.

When all of the pieces were coated I fried them (two at a time) in the oil in my tiny cast iron frying pan, which I had preheated.

Once all of the pieces were nicely browned I placed them on a baking pan and put them into the oven to bake, and when they came out they looked delicious!

I served mine over zucchini noodles, cooked for three minutes in boiling water, and tossed with pesto sauce. After slicing the chicken and placing on top, I sprinkled the whole dish with 1 tablespoon of parmesan.

The result was fantastic, and I had enough chicken leftover for another meal. I hope I can participate in another bake-along in the future, it was a lot of fun!

  1. Kate your chicken came out so delicious looking!! I love my cast iron pan! It makes so much difference when frying food. I have a cast iron pizza pan too that I just love. I’m so happy you joined us!! I’m not sure what recipe we’re doing next but I’m already excited for it!!

    1. I was impressed because I usually end up burning things when I try to fry them, but for a change it turned out great! (I have to credit you with the idea for cooking with my cast iron frying pan, because I probably wouldn’t have thought of it if I hadn’t seen you use it for your chicken!)

      1. I absolutely ❤ my cast iron! I have the big skillet, an enamel coated dutch oven and the pizza pan that I use all the time! Hubby is in the kitchen right now slicing up some pizza we just made for dinner! 😀
