Yay! I have a recipe to share with you this week! No, it’s not for the salmon patties from last week, I haven’t had a chance to perfect them yet, but I hope you won’t be disappointed with this recipe.
Sriracha and Lime Chicken
1 chicken breast (approximately 200 g) – cut into 4 pieces
1/4 cup whole wheat flour
1 tsp Club House Signature sriracha and lime seasoning
salt and pepper, to taste
1 egg white, lightly beaten
cooking spray
Mix the flour, sriracha and lime, salt, and pepper together in a small bowl. Dredge the chicken in the flour mixture, coat it in egg white, and dredge again in the flour mixture. Spray a non-stick pan with cooking spray, and to the heated pan, add the chicken. Cook a few minutes on each side until browned, then transfer to a baking pan and place in the oven at 350 F for 25-30 minutes.
The next time I make this I will probably increase the sriracha and lime seasoning to 1 1/2 or even 2 tsp to make it a little spicier, because the flavour was quite mild.
Baked Asparagus
1 bunch asparagus
1 tsp sesame oil
garlic paste (as desired)
salt and pepper, to taste
Line a baking pan with foil and spray with olive oil cooking spray. Place the asparagus on the pan. Mix the sesame oil with the desired amount of garlic paste, and brush the asparagus with the mixture. Sprinkle salt and pepper over top. Add the asparagus to the oven during the last 10-15 minutes while the chicken cooks.
And now for my weight loss update. Progress was a little slower this week, but I still lost half a pound, putting my total at 79.3 pounds. That puts me only 6.7 pounds away from reaching 200 pounds by Christmas. That will be a total of 86 pounds lost, with 50 more to go. I have not set a time limit on my ultimate goal, that puts too much pressure on me. I do however want to keep on track and lose as much as I can before my Cruise in February.
That’s it for today’s update! Next week Weight Watchers is rolling out some changes to their plan, and I’m looking forward to seeing what it looks like. Hopefully it doesn’t slow my progress too much.
You lost weight during Thanksgiving, good for you! I am busy getting rid of the last bits of pie, etc. I was too indulgent, so now I need to do some work! I try to make certain that I hit the New Year within my target range, instead of allowing it to creep back on. So much easier for me to deal with 2-3 pounds than to not care and have to deal with more later.

Our Thanksgiving was back in October, but even then I was able to keep from being overindulgent. I did resist the sales for chocolate this weekend, but I was awfully tempted!

That recipe sounds very yummy! Good for you to maintain forward progress. I only ever worried about the next pound. Thinking of all the ones I needed to lose was just too overwhelming.

I agree. I think if I had kept my ultimate goal in mind all the time, I would have been discouraged long ago. I try to set my goals at around 5 lb increments, it seems much more achievable.
