I failed in my quest this past week, to find another recipe to post here. Not that I didn’t come across any awesome recipes, I just didn’t get to make any of the ones I came across. Work has been keeping me busy a little later than usual each day, so I’ve been making do with simple dishes, with salad since my cooking time has been more limited
I was browsing around on Facebook Sunday and I saw a delicious looking recipe for chicken breast with Parmesan cheese and paprika. Of course, I didn’t think to save the recipe, so when I was trying to think of something a little different for dinner last night, I thought I would attempt to make my own version, and here it is…it’s super simple, I promise.
Week 29, and I’m still going strong. Sometimes this surprises me, because there were a few times in the last few years that I thought I was ready to commit to losing weight and getting healthy, but it just didn’t work out. Having struggled with this in the past, I know that for me, I have to really be in a specific mental space in order to make that commitment to myself, and apparently, I was finally back in that space this time around.
I made this soup last week because I had a bad week, and was having a hard time staying warm. The weather hasn’t changed that drastically, but fall is in the air, and a good hot soup is always comforting in such weather. There aren’t a lot of ingredients in it, I would have added more vegetables, especially a few carrots, and celery, but my pot was already quite full so I decided to quit while I was ahead.
This week’s post is a short one. Unfortunately, I haven’t been feeling the greatest, so I haven’t tried any new recipes in the last week. I found a really great looking mushroom recipe that I want to try this week, so I’ll definitely post that next week
